Horseradish and Garden Vegetable Dip
1 package Firm Silken Tofu
2 tbsp grapeseed or olive oil
3 tbsp Tarragon & Garlic Vinegar
2 tbsp Midwestern Garden Radish
1/8 cup capers
1/2 cup chopped pickled beets (we used golden beets - red ones will give you a lovely pink dip)
Pour all ingredients into a blender and pulse for 2 minutes.
This is a healthy yet flavorful substitute for blue cheese dip. Perfect when pared with a trio of radishes, watermelon, black pepper and super spicy purple varieties. This springy spread is an ideal start to a party celebrating St Patty.
