Dark Chocolate Mousse


12 ozs dark chocolate (Xocai XoBiotic Squares, broken into pieces)
4 tbsps unsalted butter (cut up)
8 whole large egg whites ((preferably pasteurized))
4 tbsps sugar
1/2 cup heavy whipping cream (whipped)


Place XoBiotic Squares in a large microwave safe bowl. Microwave on high 1 1/2 to 2 minutes, stirring twice. Remove from microwave; stir until smooth. Stir in butter until melted. Set aside. In another large bowl, with mixer on high speed, beat egg whites and sugar until soft peaks form. Fold whites into XoBiotic Squares mixture. Fold in whipped cream. Spoon into dessert cups; cover and refrigerate at least 2 hours. Serves 8
