Not So Black Bottom Cupcakes
For the Cupcakes:
2 cups brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 cup buttermilk
1 cup strong coffee, at room temperature
1/2 cup vegetable oil
For the Cheesecake Topping:
Preheat the oven to 350 degrees F.
Grease or line the cupcake pans.
Mix in the buttermilk, coffee, oil and eggs.
Fill each cupcake about 1/2 full.
Mix in the eggs and flour.
Spoon a tablespoon of the cheesecake mixture over each cupcake.
Sprinkle with chips.
Bake for 20-25 minutes, or until an inserted toothpick comes out clean.
