Homemade Guacamole Tortilla Chip Dip

1 large ripe avacado
1 clove of garlic
1/2 fresh, juicy tomato, finely chopped (keep the juices)
2T lemon juice
Fresh parsley (2 sprigs for garnish)

In a clean bowl, grate your garlic then add your lemon juice. The lemon juice will 'cook' the garlic so it will not be over-powering. Next, add the tomato including the juice. Peel your avacado and dispose of the pit (or you could plant it). Place in bowl and mix with a fork. The consistency you are looking for is creamy and smooth. Place your homemade guacamole tortilla dip into a clean bowl for serving and sprinkle your fresh parsley on top. Serve with warm tortilla chips or with your bean burritos.
