Old Cuban Cocktail
2 basil leaves
1 ounce freshly squeezed lime juice
1 ounce simple syrup
1 1/2 ounce good quality amber rum
2 dashes Angostura bitters
2 ounces Champagne
Using a cocktail shaker add the basil leaves and lime juice. Using a muddler, muddle gently mash the basil leaves.
Add the simple syrup, rum, butters and a handful of ice. Shake vigorously for 20 seconds.
Strain into a coupe glass and top with champagne to serve.
