Skinny Apple Pie
½ cup brown sugar
½ cup granulated sugar
1 teaspoon vanilla
pinch of salt
½ cup flour sifted together with 1 teaspoon baking powder
3 medium Granny Smith apples, pare, core and chop into smaller pieces
½ cup pecans or walnuts, chopped
3 tablespoons butter, melted
2 tablespoons granulated sugar
¼ teaspoon cinnamon
Preheat oven to 350°F.
In a medium bowl, beat egg then add the rest of the ingredients in the order listed. Spread in a greased 9-inch pie pan. Bake for 25 minutes (30 minutes if you don't add the topping).
Optional: In a small bowl, combine the melted butter, 2 tablespoons sugar and cinnamon. Carefully remove the pie from the oven and drizzle the butter mixture over the top and return to the oven for 5 minutes, until the top is nice and brown.
