Cod Cakes With Asian Inspired Salad
1 pound fresh Cod fillets
2 cloves Garlic, minced
1 teaspoon fresh Ginger, grated
1 Jalapeno pepper, seeded and diced
1/4 cup shredded Coconut
1/4 cup Cilantro, chopped
2 tablespoons Olive oil
1/2 cup Sweet Thai chili sauce
1 cup Iceberg Lettuce, finely shredded
1 cup Cabbage, finely shredded
2 tablespoons Brown Sugar
Place in a large bowl with the garlic, pepper, coconut and cilantro. Combine ingredients by hand and then shape into four cakes, 1/2 inch thick. Set aside.
In a medium bowl, combine shredded lettuce, cabbage and cucumber. Set aside.
