Appetizer: Salami Rolls


Salami Rolls - Involtini di Salame
Preperation: 10 minutes
Serves: 4
12 slices of Hungarian Salami or (Genoa Salami)
7 ounces of ricotta
4 tablespoons of Parmiggiano Reggiano
about 10 black pitted oilves
Lettuce Leaves for decoration (optional)
white pepper
12 toothpicks


Dice the black olives and set aside. Meanwhile in a small bowl, mix together the ricotta with the parmiggiano reggiano and add pepper to taste and the olives and mix.
Spread the slices of salami with the ricotta and parmiggiano and olive mixture and then create rolls which will be closed with a toothpick.
Place each salami roll on a serving dish and enjoy.
Optional to serve salami rolls on a bed of lettuce.

When making salami rolls it's very important to focus on the main ingredient in this case the salame and the key ingredients which are an importante part of the filling. This dish is served as an appetizer and therefore it is very important not to overwhelm the filling instead use the right amount of light ingredients which are: ricotta, parmiggiano Reggiano and just enough black olives for flavor and crunch.

There are many variations to this dish, you can just add about anything to make it more appetizing, like grilled vegetables but in this case good quality Italian cheeses are all you need to achieve deliciousness.
Hungarian salami is used in this recipe because of it's texture and flavor and also it can be easily rolled and held in place with a simple toothpick. If you prefer Genoa salami, in stead of Hungarian Salami its just as delicious.
