Triple Nut & Chocolate Energy Bars
4 oz unsalted butter
2 tablespoon brown sugar
2 tablespoon granulated sugar
1 tablespoon honey
1/2 cup cake flour, firmly packed
1 cup nut mix (sliced almonds, cashews, walnuts)
1 1/2 cup rolled oats
5 pieces Ghirardelli Hazelnut Heaven Dark Chocolate, chopped (or 1/2 cup bittersweet chocolate chips)
Preheat oven to 350°F.
In a saucepan, heat up butter over medium heat until butter is melted.
Add brown sugar, granulated sugar, and honey. Stir constantly until sugar and honey are completely dissolved in the butter. Remove from heat.
Mix flour and nuts together in a bowl.
Add flour mixture into butter mixture. Stir until even. (You might feel the mix is sorta dry at this point but don't worry.)
Next, add chopped dark chocolate or chocolate chips and quickly stir until chocolate is evenly spread out.
Scoop the final mixture into an 8"x8" buttered baking dish and compress it firmly by using the back of a big spoon.
Place the baking dish at the middle rack of preheated oven and bake for 25-30 minutes.
When done baking, let the energy bar sit for a few hours until completely cool. Cut into 12 bars and enjoy!
