Sausage Stuffed Sweet Potatoes
1 baked sweet potato
2 sausage links, sliced (paleo approved if necessary)
1 cup greens (spinach, kale or mustard greens)
Heat 1 tbsp oil over medium high heat.
Saute sausage for about 5 minutes or until you get some browning on each side.
Add spinach and stir for a minute or two until spinach begins to wilt.
Cut slits in sweet potatoes and fill with sausage and spinach.
Salt and pepper to taste.
