Sweet Potato Hash with Chorizo & Mushrooms
2 sweet potatoes
1 minced garlic
1 small white onion
white button mushrooms handful
2 sausages sliced (chorizo, salami
2 tsp paprika
ground black pepper
1 tbsp seeded mustard
Chives to garnish
Slice of butter
1 tbsp olive oil
Boil the sweet potatoes for 10-15 minutes until the skin becomes soft. This is just to peel the potatoes. Remove them from the water and peel the skin off. Then cut into 1-inch cubes.
Prepare a pan and add olive oil, onions and garlic until they start to sweat.
Add the sweet potato cubes to the pan on high heat.
Add the chorizo and sliced mushrooms and stir.
Reduce the heat and add paprika, pepper and mustard. Add slice of butter.
When the sweet potatoes are cooked through, crack 3 eggs on top of the hash in the pan and cover the pan on low heat. The steam will help cook the eggs (you will know when it’s ready when the egg white becomes completely white).
Take the pan off the heat and garnish with chives.
