Three Sisters Chili
1 T vegetable oil
2 C cubed squash
2 sweet peppers, cut into one-inch squares
1 large onion, cut into thin rings
4 minced garlic cloves
1 T cumin
1 t paprika
1 T chile pepper
1 t salt
½ t pepper
1 15 oz can (drained) diced fire-roasted tomatoes
1 15oz can (drained) black beans
1 15oz can (drained) pinto beans
1 15 oz can corn kernels
Preheat oven to 450 degrees.
In a bowl, mix the oil, squash, peppers, onions, garlic, cumin, salt, black pepper and paprika.
Spread evenly on lightly oiled baking sheet and roast in oven for 20-25 minutes, stirring occasionally until squash is tender.
Place roasted veggies in a deep baking dish and add tomatoes, corn, beans.
Put entire mixture in baking dish back in oven for another 15 minutes.
Top with chopped cilantro and serve with dollop of sour cream. Great served with corn bread too!
