Sweet Potato Risotto (10 ingredients!)
1 small onion, chopped finely
2 garlic gloves, minced
1 cup rice (190 g)
1 medium sweet potato (about 280 g)
2 tsp vegetable stock powder (sub: use vegetable stock liquid instead of water)
2 cups water (500 ml)
Salt & pepper
Lemon or lime juice, to serve
Optional: kale, to serve
Fry the onion and garlic in a large pot. Add a splash of water to prevent them from burning.
Add rice and water and bring it to a boil.
Cut the sweet potatoes into small cubes and add them to the pot.
Cook for about 30 minutes or until the rice is done and all the water has been absorbed.
Optional: steam the kale for 5 minutes
Season the risotto with salt and pepper. Squeeze lemon or lime juice over it and serve.
