Chicken and Dumplings

4 cups gluten-free chicken broth
4 cups diced cooked skinless chicken breasts
2 cups frozen mixed vegetables
1 tablespoon dried sage
1 tablespoon dried thyme
1 tablespoon onion powder
1⁄2 teaspoon salt
2 cups unsweetened almond milk
6 tablespoons gluten-free cornstarch
2 large eggs
1 1⁄2 cups Bisquick Gluten Free Pancake & Baking Mix
4 tablespoons dairy-free buttery spread, melted
2⁄3 cup unsweetened almond milk
In a large pot, add chicken broth, chicken, vegetables, sage, thyme, onion powder, and salt. Bring to a low boil over medium heat.
In a small bowl, add milk and cornstarch together and stir until cornstarch is dissolved. Pour the milk mixture into the large pot with chicken broth and stir until fully combined. Continue to boil.
In a medium bowl, whisk eggs. Add Bisquick and stir. Add the buttery spread and milk to the Bisquick mixture and stir until fully combined. The batter will be sticky.
Using a greased ice cream scoop, drop dumpling batter into the chicken broth mixture. Reduce the heat to low and cook for 10 minutes. Cover and cook for an additional 15 minutes. Remove from heat and serve.
SAVE TIME AND STILL HAVE CHICKEN AND DUMPLINGS
One of the shortcuts to making chicken and dumplings so easy is using a gluten-free rotisserie chicken. Most grocery stores and even big box stores now have readymade, piping hot fresh rotisserie chickens available. Always remember to make sure that the spices and marinades they use are gluten-free and dairy-free.
