Butterbean and Radish Salad
 for Kentucky Derby and More

The Kentucky Derby is right around the corner (May 6 and 7) and this week we'll be featuring a series of delicious down home recipes to help you celebrate this spectacular historic horse race in style. From Shrimp and Smoked Grits with Tasso Gravy and

Today we're starting off with this flavorful springtime Butterbean and Radish Salad. This fresh and simple salad bursts with flavor from cilantro, parsley, lemon juice and cumin, which lends a pleasant and distinctive pop of spice. Butterbean and Radish Salad

1 pound Butterbeans shelled fresh or frozen butterbeans (lima beans)

½ pound radishes, thinly sliced
3 tbsp lemon oil
2 tsp cumin
1 tsp fresh lemon juice
3 tbsp cilantro rough chopped
2 tbsp flat leaf parsley rough chopped

Blanch beans in a pot of boiling water for 2-3 minutes. Rinse under cold water until cool. In a large mixing bowl mix beans and radishes, add oil, lemon juice and cumin. Combine until well mixed; add parsley and cilantro, season with salt and pepper.
