I am not a vegetarian but I do enjoy a good vegetarian sandwich now and again.  In addition to boosting your veggie intake, it's one of those dishes that will help you clean out your fridge and prevent you from wasting precious food.  A vegetarian sandwich can be something as simple as two pieces of bread loaded with a variety of vegetables (e.g. lettuce, tomatoes, cucumber, avocado, onion etc...) on two pieces of bread or an elaborate meal that requires several steps prior to serving.  These sandwich recipes are versatile and delicious so give them a fair try.
