2 1/4 tsp active dry yeast
1/4 cup warm water, 105-110˚F
1/4 cup + 3 tbsp (vegan) butter
1/2 cup cane sugar
3/4 cup sweet potato puree
1/4 cup (non-dairy) milk
3 1/4 cups unbleached flour, plus more for rolling
1 cup sucanat (or brown sugar), separated in half
2 tbsp ground cinnamon
1 can full-fat coconut milk, refrigerated overnight
1-2 tbsp Irish whiskey
