Summer Eating: Super Stuffed Beefsteak Tomatoes

These stuffed beefsteak tomatoes from Burnt Carrots are a simple way to prepare summer tomatoes.  Herbs, shallots, and parmesan cheese fill the crevices of the tomatoes and baked until golden brown.  While this recipe suggests using dried herbs, if fresh are available, feel free to use those instead.  Also, stuffed tomatoes are a great way to use leftovers including rice, ground meat, or even grilled vegetables.

Stuffed Beefsteak Tomatoes


2 beefsteak tomatoes (with a flat bottom)
¼ cup fresh parmesan reggiano, grated
¼ cup shallots, diced
2 tablespoons fresh sage, minced
2 tablespoons dried parsley
5 cloves garlic, minced
¼ cup olive oil, plus some for drizzling
Salt and pepper to taste
