After a long winter of root vegetables we're now starting to see some variety in our farmers' markets. Tender asparagus and spring peas, beautiful leeks and watercress, apricots and avocados. Wild Pacific halibut has just arrived at our markets here in Seattle, but you can also find it freshly frozen in any part of the country. It doesn't take much to make this fish spectacular, even just a squeeze of lemon juice and a pinch of salt and pepper.
