Fun Fact Friday: Vegetarian Sushi

Fun Fact: Not all sushi is made with raw fish! The true definition of the Japanese dish is actually just cold cooked rice seasoned with vinegar (typically rice wine vinegar). It can be topped with anything -- egg, raw or cooked fish, vegetables, and even fruit.

This quick and easy vegetarian sushi recipe from Allrecipes lets you mix and match your favorite vegetables to satisfy that sushi craving. If you're opting for a healthier grain, substitute brown rice. Serve with pickled ginger, a dab of spicy wasabi, and a small bowl of ponzu (citrus soy sauce) or regular soy sauce for dipping.


1 1/2 cups uncooked, short-grain white rice

1 1/2 cups water

1/3 cup red wine vinegar

2 tsp. white sugar

1 tsp. salt


1/2 avocado peeled, pitted, and thinly sliced

1 tsp. lemon juice

1/4 cup sesame seeds, or as needed

1/2 cucumber peeled, seeded, and cut into matchsticks

1/2 green bell pepper seeded and cut into matchsticks

1/2 zucchini, cut into matchsticks
